On Tuesday 7 April, the first bottles of Kasteel Donker 0.0 are set to roll off the production line. And not a moment too soon, given how many people have been asking for a non-alcoholic version of Kasteel Donker during our January and February 0.0 campaign. You asked, we brewed: introducing Kasteel Donker 0.0!

From 11% to 0% ABV – our team of brewers have taken on a major challenge to brew our first zero-alcohol Quadrupel. “It’s taken us a year and a half to nail the recipe”, says brewmaster Hans Mehuys. “The biggest challenge was recreating the full-bodied flavour profile of an 11% ABV speciality beer without making it too sweet.”

Hans and fellow brewmaster Stijn Van Laere experimented with numerous combinations of caramel and roasted malts, sugar syrups, and candy sugars. “This meant it took a long time to make sure everything was perfectly balanced”, explains Stijn. As for the fermentation process, this also required a great deal of attention. “We’re working with alternative yeasts that, under specific conditions, do not produce any alcohol. This means you have to constantly be on hand to help fine-tune the process. Believe it or not, making the yeast ‘do less’ actually makes the whole process all the more complex.”

Legendary taste, zero alcohol

The brewery team pulled out all the stops to make sure Kasteel Donker 0.0 would be ready on time. “The funny thing is that, originally, our aim was to launch in autumn 2026. So you could say we’ve certainly met our deadline”, explain the pair. Kasteel Donker 0.0 is proof that zero-alcohol beers go hand in hand with the complex character of a Quadrupel. In the glass, we have a dark brown beer topped with a beige head that holds nicely, with aromas of caramel and candy syrup hinting at its sweet character. The roasted notes create a full-bodied flavour profile, followed by a light bitter, spicy finish.

The question is – can you taste the difference between Kasteel Donker and Kasteel Donker 0.0? “When comparing the two, you’ll pick up the same notes of roasted malt, as well as a fruity yeast aroma in both versions. While I’m hard pushed to find a difference, you could perhaps argue that the warm rounded alcohol finish makes Kasteel Donker just a touch more full-bodied than the 0.0 version”, says Stijn.

The first Kasteel beer

It was the late Luc Vanhonsebrouck who, in 1989, drew inspiration from Ingelmunster Castle (i.e. the original ‘Kasteel’) to brew his first Quadrupel. Ignoring the traditional recipe, he opted for a complex, sweet flavour profile. The first Kasteel beer was dark, had an alcohol content of 11% ABV, produced hardly any head and was only available in large bottles at Ingelmunster Castle.

In 1991, our current managing director, Xavier Vanhonsebrouck, put together a comprehensive marketing strategy to bring Kasteel beer to a wider audience. As the shirt sponsor of Eendracht Aalst – who were then playing in the first division and ended up finishing third in the league – Kasteel won the hearts of many Flemish folk. Off the pitch, our Quadrupel became a true crowd favourite – a status that has never been lost.

A recipe for success

Our first Quadrupel set the tone for Kasteel as a brand, one synonymous with innovation from the very start. When Xavier Vanhonsebrouck set out to brew a new strong fruit beer in 2007, he used the unique flavour profile of Kasteel Donker as a base. Kasteel Rouge was a huge success, creating a whole new segment that is now more popular than ever. Similarly, Kasteel Rubus Framboise is also brewed using Kasteel Donker as a base.

Same as there would be no Kasteel without Kasteel Donker, there could be no zero-alcohol range without a Kasteel Donker 0.0. Our team of brewers are already confident of its success: “Despite not containing any alcohol, Kasteel Donker 0.0 offers all the complexity of a true Quadrupel. Its full-bodied flavour profile is sure to win over even the biggest zero-alcohol beer sceptics”, conclude Hans and Stijn.
