6 12 lamb cutlets, Ghent mustard, 100 g breadcrumbs, 100 ml olive oil

7 Plate as follows: use a cylindrical cutter to neatly arrange the risotto in a circle in the centre of the plate. Top with the white part of the spring onion and arrange the lamb chops around the risotto. Finish with a spoonful of the syrup on each cutlet.
